Florida stone crab season is seafood with a rulebook
Stone crab season is a Florida seafood tradition, but the claws, size limit, season dates, and harvest rules are part of what keeps it working.
Stone crab is one of those Florida foods that feels simple at the table and more careful on the water.
The usual season runs from October 15 through May 1. Only the claws are harvested, and the claws have to meet the current size rule. The minimum claw size is 2 7/8 inches. Egg-bearing crabs are off limits, and recreational bag limits apply.
That rulebook is part of the tradition. A stone crab dinner comes from traps, measured claws, dock work, market timing, and a seafood chain that has to respect the season. The visitor may just see chilled claws and mustard sauce. The working side is more detailed: traps go in at the right time, claws are measured, harvest areas matter, and the closed season gives the fishery room to keep going.
For a resident, this is useful when a neighbor offers to take you crabbing or when a market has a special price. Ask whether the claws are in season, legal size, and handled through a proper seafood seller. For a visitor, check the season before building a whole dinner plan around it. Fresh local stone crab is not supposed to be available all year in the same way.
Good Florida seafood often comes with a calendar. Stone crab is one of the clearest examples.
